This is the quintessential melt-in-your-mouth cookie.
It’s the crème de la crème of all cookies and it just so happen to be my husband’s favorite. He says they taste like mint chip ice cream, but in cookie form.

You’ll Need This…
2 tbsp coconut oil
6 tbsp butter
¼ cup organic coconut sugar
¼ cup turbinado raw cane sugar
1 egg
2 tsp vanilla extract
1 cup whole wheat pastry flour
½ tsp baking soda
½ cup crème de mint chips
½ cup toffee chips
pinch of pink himalayan salt
&
baking sheet
silicone mat or parchment paper
Preheat oven to 350ºF
Start by creaming together the butter, coconut oil and sugars until light and fluffy.
Add the egg and vanilla into the butter mixture and combine throughly.
Stir in the flour, baking soda and salt.
Fold in the crème de mint chips and toffee bits and the cookie batter is done!
Quick and easy. Sometimes the best recipes are the simplest ones.
Scoop 2 tablespoon of cookie batter onto a lined baking sheet roughly 2 inches apart.
Bake for 10-15 minutes or until golden. Makes a perfect baker’s dozen.
