Sometimes you just need a brownie to get you through the day; but on occasion, during those sometimes, you can’t decide what type of brownies you want.
Toffee? Or not to toffee? Nuts? Or no nuts? Cookies perhaps? Maybe just plain? Oh… the decisions are endless. So, why not have them all?
Well, your indecisive brownie dreams can be made possible if you have the Lékué Mini Brownie Pan or any individual brownie pan for that matter. But then, and only then.. can the multiple choice brownie games begin!
I purchased this awesome silicone brownie thingamajig a while ago and have been looking forward for the perfect moment to use it.
So naturally, I’m making brownies! Not only because the product title tells me so, but because I simply wanted brownies. It happens. I call it, “The Great Hankering of Brownies”.
So now, on to the brownies!
½ cup coconut oil
½ cup coconut sugar
¼ cup turbinado raw cane sugar
2 eggs
½ cup whole wheat pastry flour
½ tsp baking powder
3 tbsp cocoa powder
5 oz dark chocolate
1 tsp vanilla extract
Preheat oven to 350ºF
Start by breaking up the dark chocolate into small chunks.
Place into a microwave-safe bowl along with the coconut oil and nuke it in 30 seconds intervals. Making sure to stir the mixture throughly in between.
Stir both sugars into the chocolate mixture. Then, set aside and let it cool.
In a separate bowl, whisk the eggs until light and fluffy.
Add the vanilla, baking powder, flour and cooled chocolate mixture to your eggs and fold in gently.
Now, either…
A) Place bater in a lined pan and bake for 25-30 minutes for delicious plain brownies
B) Use an individual brownie pan with your desired assorted toppings, then scoop roughly a tablespoon of brownie bater on top and bake for 20-25 minutes
The choice is yours, choose wisely.
Either way, when you stick a toothpick in the middle, make sure it comes out clean before taking them out of the oven.
Also, I suggest letting them cool for at least 20-30 minutes. I know this sounds crazy, however these brownies tend to crumble if you take them out of the pan while they’re still hot.
So, do your best to resist the urge to eat them straight out of the oven. Trust me, it’ll be worth it!
